Spicy cranberry chutney

Ingredients
  • 300g cranberries
  • 1 yellow onion
  • 150g brown sugar + 130g white sugar
  • 1 Jalapeño pepper
  • White vinegar
  • 100ml orange juice+zest
  • 10g fresh ginger and 1 cinnamon stick

 

Instructions
  • Put sugar, jalapeños and orange juice, in a heavy-bottomed saucepan over medium-high heat. Stir with a wooden spoon to dissolve sugar, and simmer 2 minutes.
  • Add ginger, cinnamon and cranberries, and bring to a boil. Cook over medium heat, stirring occasionally, until cranberries have softened and no liquid remains in pan
